Ingredients
- 2 boneless, skinless chicken breasts (cut into thin fillets or strips)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- ½ tsp paprika
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ tsp red pepper flakes (optional, for spice)
- 1 tsp dried basil (or 1 tbsp fresh basil, chopped)
- 10 oz pasta (penne, fettuccine, or spaghetti)
- 2 tbsp butter
- Fresh parsley or basil for garnish
Instructions
1. Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the pasta according to package instructions, then drain and set aside.
2. Prepare the Chicken
- Season the chicken with salt, pepper, Italian seasoning, and paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Cook the chicken for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
3. Make the Creamy Sauce
- In the same skillet, add butter and minced garlic, sautéing for 30 seconds until fragrant.
- Stir in sun-dried tomatoes, cooking for another 1-2 minutes.
- Pour in chicken broth and scrape the skillet to deglaze and capture all the flavors.
- Add heavy cream, Parmesan cheese, and red pepper flakes. Simmer for 3-4 minutes, stirring occasionally, until thickened.
4. Combine Everything
- Slice the cooked chicken and return it to the skillet.
- Add the cooked pasta, tossing everything together until well coated.
- Sprinkle in basil and adjust seasoning to taste.

Notes
Use Freshly Grated Parmesan – Pre-packaged Parmesan doesn’t melt as smoothly.
