Ingredients
2 ½ cups all-purpose flour
•1 tsp baking soda
•¼ tsp salt
•1 cup unsalted butter, softened
•1 cup granulated sugar
•½ cup powdered sugar
•2 large eggs
•1 tsp vanilla extract
•1 cup Funfetti sprinkles (plus extra for rolling)
Instructions
Mixing the Dough
1.Preheat the Oven: Set your oven to 350°F (175°C) and line two baking sheets with parchment paper.
2.Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
3.Cream Butter & Sugar: In a large bowl, beat the softened butter, granulated sugar, and powdered sugar together until light and fluffy (about 3 minutes).
4.Add Eggs and Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract.
5.Add Dry Ingredients: Gradually add the dry ingredients to the wet ingredients and mix until just combined.
6.Fold in Sprinkles: Gently fold in the Funfetti sprinkles until evenly distributed throughout the dough.
How to Incorporate the Funfetti Sprinkles
•Don’t Overmix: When folding in the sprinkles, mix just enough to distribute them evenly. Overmixing can cause the sprinkles to lose their color and make the dough less fluffy.
•Add Extra Sprinkles on Top: If you want extra color, lightly roll each cookie dough ball in more sprinkles before baking.
